I’m not a huge fan of the kitchen, well, not always. I hate to be a slave to the stove, but more than that I’m not a huge fan of the microwave because I hate what it does to valuable nutrients, meaning it kills vitamins and minerals are often leached out of the vegetables. I also despise those bags that you can cook your vegetables in, I think they’re a plastic chemical nightmare. However, I love my vegetable steamer and find that it satisfies my need to feed my family nutritious vegetables without making me a total slave to the stove.
These carrots are pretty much perfect, they’re perfectly tender and contains tons of flavor to make the entire family happy.
Ingredients:
- 4 cups chopped carrots
- 2 Tbsp butter
- 1 Tbsp snipped fresh dill (or 1/2 tsp dried dill)
- 1 Tbsp lemon juice
- 1/4 tsp sea salt
- 1/8 tsp pepper
Instructions:
In a medium sauce pan, cook carrots covered in a small amount of boiling water (or steam) about 10 minutes or until crisp-tender. Drain water. Stir in butter, dill, lemon juice, salt and pepper. Toss lightly to coat. Enjoy!
